Soups at BRUNO are built slowly and served hot. Chikhirtma — the classic Georgian chicken soup, lifted with egg yolk and lemon, bright, warming, restorative — is on the menu year-round. Salmon soup with saffron and fennel sits on the light side: rich without weight. Seasonal rotations carry the rest of the list: pumpkin with brown butter and sage in autumn, a clear mushroom broth with tortellini in winter, chilled cucumber with yoghurt and mint in high summer. Bread is baked that morning, served on the side. Every bowl reads as a course unto itself — order one to start, or as a quiet lunch on a cold afternoon.
